I had this retrofit on my Jetta and I was a big fan of it. The unsprung weight complaint I find to be a bit much. As stated above, the weight difference isn't exceptional. The gain here is that you have a greater surface area of clamping force with the addition of an extra caliper piston. Overall, the cost/benefit of this setup is great.

Ok I'm sold. Having had 4pot's from spoon/nissin, brembo, and wilwood, I'm ready for AP!
I have have Stoptechs with their ST-40 calipers on my VRT. These calipers uses the same brake pads as 944 Turbo calipers AFAIK.
Although I haven't experienced this with my Phaeton, my W8 had problems with a brake wobble under heavy braking and has the ATE 2FN calipers which were the predecessors to the Phaeton's calipers. I was worried that it was the discs that had warped but when I stripped them down it appeared that the brake pad connected to the pistons on one of the calipers had very uneven wear. Installing a new set of pads completely solved the problem although I suspect I might need to get the calipers refurbished to sort out the uneven wear...
The Passat 11.3" ATE 57 calipers are the same physical size as the 11.3" ATE DE 54s that came on 96-99 MKIII VRs. So any wheel that will fit over a MKIII VR 11.3" Girling DE 54 brake caliper should fit over the Passat 11.3" brake caliper.
Personally I would not delete the proportioning valve. I run 304x25mm front with AP Racing calipers and stock MKIII rear disks with MKIV calipers. The stock MKIII proportioning valve can be adjusted to the point there is too much rear bias.
i have the audi twin piston caliper/G60 rotor setup in the front of my 16vT GLI. i think theyre great, i can lock up the brakes at 50mph if i want so braking power is def not an issue.
Rear calipers are a Porsche 944T, the disks in a VW Corrado / Golf G60, 280mm, 274mm lowered to the clamps are anchored with an adapter for Grinling54, is to lower a bit with the grinder, but it is simple
In my car...Not really. Its so light and the G54s provided plenty of stopping with decent pads. I expected more but Meh? Ive been runnin em for nearly 4 years now?
The biggest problem with the Girling 60s is the weight, and the fact that the calipers are designed for 10 5/8" rotors, so they aren't a perfect fit with Corrado G60 11.0" brake rotors that they are used with.
