Ferodo ds2500 is a great option. I’ve heard yellows are noisy/dusty. I’ve inhaled plumes of it first hand on the track.

I replaced my Mk6 stock pads with EBC RedStuff and love them (better feel under hard braking and practically no dust).
At 100k miles it is time to replace the fuel filter. It is pretty easy to do, just pay attention to how the hoses release by pushing in at certain spots on the connector to not break them.
I ride the tires at 42 psi and currently w/ new Cooper Instincts at 44 psi returning comparable mileage.
So the Denso (Passat) will bolt right up and hoses will work fine. I only got about 1oz of oil out of the drain (fill) hole and none from the ports. There is only about 1/4" in the cup--I'd estimate less than 1oz. Book calls for around 4oz which I will put in before install.
I use Michelin 235 40 18 4S on my MK7 with Neuspeed RSe12 8"x18" and the grip is a tick better than the standard size. This combo is also lighter than the stock wheels and tires...and along with the suspension modifications, it's a difficult subject to try to quantify. I am always concerned with wheel and tire weight...that drives my decision making...if you like the look of a 19" rim, go for it. I think that you will find a larger variable between tire types and widths where ultimate grip is concerned...steering response is in theory better with a lower profile tire, but sidewall construction will also affect steering response with a similar tire size range.
Vredestein Quatrac Pro All Weather tires were used about 8 -9 months - approximately 6K miles. Excellent condition. 2 Tires have 9/32” wear, one with 8/32" and last one just under 8/32" (new is 10/32)
Honestly, avoid brembo. I think I have pagid on my golf GTi currently as they needed doing and I couldn't get anything else. I drive that hard and not really had any real issues unless really pushing it.
My current Bridgestone Potenzas have plenty of tread left, but developed sidewall cracks and need to be replaced.
Just a heads up, I used that rebuild service for my ATE booster out of my mk1 rabbit and it was trash. The internal valve was full of junk causing the brakes to stick when you let off the brake pedal.
