I got Zimmerman blanks and Ferodo Racing DS2500 pads and love that combo for track/street. They can be a bit noisy when cold and light braking on the street but if you just brake a bit harder no noise at all.
I went with Zimmerman blanks and Hawk HPS pads (non 5.0), been very happy with them.
They have replaced my rotors under warranty without me flagging a warranty request. I flagged the shudder and would have paid for brakes.
Heard good things about galfer rotors
I ran their track pads and rotors on my WRX before I put Brembos on it and had good performance. They’ll likely be fine unless you’re a super serious track driver (but if you were you probably wouldn’t be asking this question).
I run those rotors with their track day pads on track and have loved their performance.
R1 Concepts are the only brakes I use on my cars. Last far longer then OEM.
I have Stoptech rotors and EBC Yellow stuff pads. I like the feel, the dust not so much.
I had exactly the same issue with a Skoda Superb 2020 TDI. With just over 60k Kms on the car, all 4 discs and pads have been changed due to corrosion. While the cost is a stinker, the fact that the braking performance is rubbish makes it worse.
