I run 225/60/16 Goodyear Ultragrip Ice tires, and I have to say that the Eurovan is extremely capable in heavy snow with these tires.

I've been very impressed with the EV's performance in the snow. I'm running 15" Continental ContiWinter Contact snow tires, and use them year-round since I don't put many miles on during the summer months.
17" of snow We just received an official 17.1" of snow so here is how my 01mv did with a set of Nokian Haks: At the end of the storm I tried to drive uphill to my house on an unplowed residential street. Made it most of the way before getting stuck - the front bumper was pushing snow.
As for the brakes the S2 16v's should take it hands down.

But the MK2 brakes by far hands down feel better and seem to grab better. I'm not sure why that is, they are actually more worn than my Mk1.
But for the OP my clutchnet red pp and 6 puck sprung disk did about 5000 street miles 15 11 second passes and 5 10 second passes before it started to slip. and needed a new disk. Id suggest it. Drove almost like stock.
overhauled the brakes(all 4 corners): -calipers(rebuild) -discs(brembo) -pads (ferodo ds2500)
It was brought in by another shop that installed rear brake pads and rotors.
Yep, guess it's common, but mine just caused a smoking fire under the hood! As mentioned, I just started the car in the a.m. and was backing out of the garage. It started sounding and acting funny as explained and the engine light was blinking.
