I've been running Castrol 5w40 in my car and have had no problems.

I'm running T6 in my car as well It's been great the last few changes, best oil I've used for my 1.8T and I have over 190k on my engine.
I am using the Ravenol for last 3 changes, oil consumption at 5K change intervals is less than 1/2 quart (about 1/4 qt on last change) and hoping this may lead to less carbon build up.
I did my 1.8T AWP valve cover gasket two weeks ago and I can highly recommend Mobil1 0/40. Used it since 3/2002.
NGK are a good spark plug brand.
Can't beat the 2.5 for hassle free reliability. Economy sucks, though. I have had my 130k mile 2.5 Rabbit since new and I have never averaged more than 25-26mpg in mixed driving, but on the other hand I haven't done much more than oil changes and spark plugs on it.
Girling 60 on the Mk III 4x100 is the best bolt on bang for the buck. Make sure you get the girling 60 brackets/carriers too.
I have a Walbro intank pump, I replaced my oem when i though it was bad a few years ago.
Just swapped out some pretty old looking OEM bosch plugs that were gapped at .045 for some reason. Put in PFR6Q at .032\". Didnt notice much of a change.
In Sept I had to have the entire intake manifold replaced (covered by warranty) because the "intake runner has broken from the adjustment lever". The way the dealer explained what that means sounds just like what you explained. It took them like 3 months to track down the problem and my symptoms just kept getting worse and worse (rough idle, misfires, bad engine "hiccup" at 2500 rpms). I also had all injectors replaced at the same time and had carbon build up hand cleaned. Car ran great for a while and now I can feel the "hiccup" starting again at 2500 rpms. Dealer explained about how VW has redesigned the intake manifold for 2010's due to this issue. I have to say, reading your post is depressing as I have this sinking feeling that this is not the last time I will have to replace the intake manifold.
