I’ve been happy with the Pirelli’s easy to mount and good puncture protection while feeling fast.
I run the pirellis p zero 4s and love them comfortable and roll really well.
Opposite datapoint: I run Pirelli Race TL Rs 700x30s on my Gen 7 Madone (tubeless FWIW). Way more comfy than the OE 25s (R3) and faster.
Nitto Motivo 365 is better imo if you’re doing any snow driving!
If you want fast and durable, Look at Pirelli Cinturato Velo.

PS4 AS FTW. 166k miles on my GLI (bought it new) and after couple sets of Pirelli Cinturato P7s… it’s a brand new car again. Unbelievable.
I went from stock-like tires (Atturo TrailBlades, P275/60r20) to Nitto Exo-Grapplers (LT275/60r20, E-rated). I lost approximately 1mpg highway, 1.5-2 city.
Their summer tires are not guaranteed- I had a set of rears that I paid over $800 after 700 miles they had major uneven wear and alignment was spot on. I called sent pics and they said we don’t guarantee those tires - p-zero’s.
My pirellis handled well but God was their longevity shite Pretty much cooked by 20,000ks All other tyres gave me 60,000+
