Went from Cooper Discoverer 17 inch to 20 inch Nitto 420S. It's day and night. I literally have a track truck now. The truck is already dropped so it handles like a little sport car now.
We have the optional 21" wheels with T rated Pirelli Scorpion tires. Plenty firm, and it doesn't wallow around at all.
I currently have perelli sottozero 3 on my Stinger, which have been fantastic during winter track days and are rated for higher speeds than the x ice 3s are.
They're much quieter than the first round of tires I had on the car (Nitto NT421Q), and probably about as good as it gets in snow without going to actual snow tires.

Summer Tires I have found that Nitto NT555 G2 tires perform just as good as any of the tires you mentioned at half the cost.
A few months after owning my 2018 SEL-P I wound up replacing all four tires. It shipped with Continentals and I replaced them with Pirellis, the difference in road noise was like upgrading an entire class of vehicle. It's not funny how loud the Conties were and how much quieter the Pirelli are at the same size/wheel/etc.
I have had a few Pirelli tires. The only Pirelli tire I was ever impressed with were the Rosso's and the Corsa's. One thing to mention is Pirelli mileage warranties have always been inflated (as well as many other companies). Do not expect 50k out of these and track every rotation and do them on time. With other Pirelli performance all season tires they were good for the first 1/3 of tread then got borderline undividable in snow and heavy rain. More noticeable than other competitors when worn. One thing to note is I have always liked the Pirelli sidewall stiffness compared to Michelin and Continental.
They slip like crazy in my g in the rain. NT05s in 285 width. Good dry performance. Scares me a little on raining freeway rides.
Wrote my car off into an enbankment on NT05's in the rain while driving normally.
