I’d recommend Toyo Extensa A/S II. I’ve got close to your size and found them to be very nice driving and quiet. Bought them last October for $107 each from Discount Tire in AZ.
I have the Toyo Open Country A/T III EVs. After about 3k mi, I’m observing 1.9 mpk on a G1 Quad in all purpose. Coming from the 21” Pirellis, I’m pretty happy with the road noise and how they’ve handled, especially this winter so far.
Look at the Toyo AT 3 EV’s, they are super light for an AT tire. They rode great, zero noise.
I went with a set of 5 Toyo Open Country AT3 in 265/75/16 which have better snow performance were much cheaper at $185/tire.
Hot take, but the TOYO ectensa tires have been great for me the past year I've had them on, granted we don't get much snow or freezing roads where I live. But for 600 out the door I have them a shot and the grip is great without wearing too quick
I've been riding Toyo Open Country AT3's on my taco for 4 years and they do great in the snow/ice.

Had one almost identical and changed it immediately, not worth the risk and unlikely to pass MOT.
