i personally run a 90c/195f one, the GATES 33209. it gets cold here in WI and it will hold 192f on the highway with the heat at speed 1
I still changed my thermostat to an Aisin unit for peace of mind, so far so good.
I have an 06. Had the same issue. Bought a cheap thermostat which turned out to be no good but acted the same as the old thermostat. Then, I changed EVERYTHING else in the coolant system, lol. Switched to Gates, problem solved.
I just bought two thermostat related parts off rockauto that are both Aisin yesterday.
I have installed them in two rebuilt, and they are working perfectly fine
To complement this, the Gates thermostat I bought for a Mercedes M272 engine was identical to the Mercedes A2722000115, except that the Mercedes logo cast into the housing had been (mostly) ground down.
It's a very easy thermostat to replace, I just did it a couple days ago on a 2008 Hyundai Sante Fe with the big 3.3l V6. The gasket comes with the OE Aisin thermostat, too, making it even easier.

Man, you just get the thermostat itself. Nothing more. Something like that was for 2008 Rabbit (2.5 I-5). Mine car had exactly same symptoms. It would reach 70 C and maybe at some point 80, but had tendency to stay cool (below 80) when driving. I know thermostat opens at 80 C, so anything below 80 is not quite right.
we warrantied a Gates thermostat on a pentastar 3.6L three fkn times because the guy said it kept overheating going up hills. Originally replaced for P0128 thermostat code. Then we put an oem part in and it’s never overheated since.
