If it goes away when the car warms up then it’s a failing coolant temperature sensor. It’s dumping in excess fuel because there’s no cat and then when it finally warms up, the sensor starts working to reduce fueling.

These tsi motors tend to run hotter then standard engines. I would top off the car (once cooled typically around a hour) open it up and take it to the line above minimum, that\u2019ll be your maximum. Watch it over the next few weeks. If it goes below minimum again, you have some sort of leak.
Our 04 Jetta TDI is still running great and doing its thing. We did swap it to a manual transmission which is actually fairly straight forward with these vehicles too.

The valve covers may leak and drip on the plastic water pump housing causing a leak. If that hasn't been upgraded to the metal one get that done. We went through two of the plastic ones under warranty. Other than that I had no issues with the car.
second winter with my mk8 as well over on the east coast. the frequent issue I run into is my front assist being unavailable from snow / ice. Otherwise I find it very smooth in the winter, I almost prefer winter driving as opposed to spring-fall. my car drives better on my 17" winters than my 19" oem wheels.

My rear breaks also wore out faster. I just had them replaced (1 month outside the extended warranty lmao kms) at 27k km.
Hope you screwed them in with the correct torque, unlike my VW dealer. They started to unscrew themselves and causing instant misfire and rpm drops to 200 and engine shutoff.
Two things:
1. That is a straight MOT failure because it's dangerous.
2. Your choice is to replace the tyre today, or the wheel **and** the tyre tomorrow.
