I have a 2001 Forester L and I enjoy using Castrol Edge 5-30 during winter and Rotella T6 5-40 during the summer in Arizona.

Should be fine, but CHECK THE OIL FREQUENTLY. This series of engines is notorious for oil consumption problems, which may not appear at all when doing short trips, but suddenly it's drinking 1qt or more per 1000 miles on the highway.
Take a quart of oil with, especially if you don't have reliable data on how much your engine burns. Check it occasionally and top off if needed.
I've been running Idemitsu oil in the XT and the wife's Crosstrek for the last four and five years and have been happy with it.
I use Pennzoil Platinum Full Synthetic in my 21 Forester. $23 for 5qt from Walmart and $12 oil filter from dealership.
Liquimoly molygen for the win.
My '15 Forester will burn a quart of oil every 1000 miles if I run 0w20.
I switched to 5w30 and it's all good for 5000 miles
I use rotella 5-40 in mine. It's really cheap for a full synthetic and I saw less oil consumption after switching. It's intended for diesel engines but I haven't seen any negative effects after using it for 60k miles. I usually change it around 4k miles.
