I just picked up some general grabber A/Tx (215/75r15) on Amazon for $128 a pop. Previously had the general grabber at2s which were also a steal. Amazing tires with long life and good performance in Midwest winters.
The CrossClimates are wonderful tire. I just put on a few 100km of light off road as you requested and no issues at all. They are wonderful in rain and snow. The only downsides would be: unidirectional and the aggressive thread pattern seems to suck up the rocks pretty good. But if you do mostly highway, these truly are an all climate tire.

If you want a standard tire and not oversized or off-road, you can’t do better than Michelin defenders. The just don’t wear, and they’re great all over Colorado. I take them camping and I get less noise and good gas mileage on road, and I’ve never been stuck offroad. Great in the snow too.
I freaking love my Michelin LTX A/T2. I’ve got about 45K on them and they look like they’ll go another 30. So quiet and compliant.
I currently run General Altimax AW365 tires and couldn't be happier. They're severe weather rated, not noisy like all terrain tires and handle incredibly well in mud and snow.
So far I have almost 2000 miles on them and they feel and look just as good as new.
I can only talk about the X-Ice Snow and for only one season, its probably the best performing winter tire I've used and is rather quiet. They claim they'll outlast their major competition but I can't verify.
I just got the G max RS on my Mk 7 from a dealer. Don’t know too much about track performance but they’re grippy if a little loud while on the highway.
All weathers weren't worth it in my case, I'm not hard on my tires at all and I logged 35-45k On the ones I bought last year and they are already at 2/32'nds. I went back to all seasons this year, due to I'd rather get the 80,000km's with the Michelins I bought. Nor did I really notice a difference in traction/handling between All Weathers and All Seasons.
